This is the first coffee we are going to be working with from our relationship with Sitio Santa Clara, located in the Oliviera region of the famous coffee growing area of Minas Gerais. The dry winters in this region have led to the use of the ‘Direto da Roça’ method of processing, using no water from the plantation to the drying patios. This results in an incredibly sweet and complex coffee with a more accentuated fruit character.
